July is Ice Cream Month—not that we need an excuse to make this elevated ice cream cake. Layers of homemade cherry and pistachio ice creams sit atop a fudgy chocolate base that's somewhere between a cake and a brownie. The whole thing comes together with the help of the trusty KitchenAid stand mixer, which churns the ice cream in the Ice Cream Maker Attachment and makes quick work of the chocolate cake layer. Spumoni originated in Naples, Italy, as a molded gelato dessert filled with ingredients like candied fruit, nuts, and chocolate. Over time, regional variations emerged throughout Italy, often featuring layers of two or more flavors. When the dessert made its way to the United States, it helped inspire the layered ice cream treats we know and love today, including Neapolitan ice cream.
