Veggie Gratin with Farmer’s Market Salad

Veggie Gratin and Farmer’s Market Salad

Cook Time: 45 minutes

Ingredients:

  • 2 tablespoons butter, melted
  • 1 tablespoon olive oil
  • 1 small butternut squash, peeled, seeded, and thinly sliced
  • 2 medium leeks, white and light green parts sliced in thin rounds
  • 1 head cauliflower, cut into florets
  • 2 cloves garlic, minced
  • 1 teaspoon fresh thyme leaves
  • Salt and freshly ground black pepper
  • 2 cups heavy cream, warmed
  • 1 cup grated Gruyère or sharp white cheddar
  • 1/2 cup fresh breadcrumbs (optional)

Instructions:

  1. Preheat oven: Heat oven to 425°F. Pour melted butter and olive oil on the bottom of a shallow 3-quart baking dish.
  2. Toss vegetables: Toss the sliced vegetables into the baking dish with the garlic, thyme, and generous pinches of salt and pepper. Mix together to coat lightly in the butter and oil.
  3. Add cream and cheese: Warm cream in a saucepan until just about to simmer. Pour over vegetables. Scatter cheese on top and season again with salt and pepper.
  4. Bake: Cover with foil and bake for 15 minutes. If using breadcrumbs, add them on top, then continue baking uncovered for 35–40 minutes, until vegetables are tender and top is golden and bubbling. Let rest 10 minutes before serving.

Creamy Lemon Herb Dressing Over Lettuces

Ingredients:

  • 4 tablespoons lemon juice
  • Zest of one lemon
  • 2 green onions
  • 1 cup soft herbs (parsley, dill, cilantro)
  • 2 tablespoons sour cream
  • 2 tablespoons extra-virgin olive oil
  • Salt & pepper

Instructions:

  1. Blend the Dressing and Make the Salad: Blend all ingredients together in a food processor, blender, or with a handheld blender. Toss with lettuce leaves, cabbage, and other fresh vegetables you have on hand.
