Tahini Chicken Wraps with Crunchy Veggies

Ingredients:

  • For the Tahini Chicken Salad:
    • 2 cups shredded rotisserie chicken
    • ¼ cup Mighty Sesame Spicy Tahini
    • 1 ½ tbsp lemon juice
    • 1 tbsp plain Greek yogurt or mayo
    • 1 tsp Dijon mustard
    • 1 small garlic clove, grated
    • 2–3 tbsp warm water (to thin as needed)
    • Salt and pepper, to taste
  • For the Wraps:
    • 4 whole wheat or spinach wraps/tortillas
    • ½ cup shredded carrots
    • ½ cup thinly sliced cucumber
    • ½ red bell pepper, thinly sliced
    • ¼ cup chopped fresh parsley or baby spinach
    • Optional: sliced avocado or sprouts for extra texture

Instructions:

  1. In a bowl, whisk together tahini, lemon juice, yogurt, mustard, and garlic. Slowly add warm water until smooth and spreadable. Season with salt and pepper.
  2. Fold shredded rotisserie chicken into the tahini dressing until well-coated.
  3. Lay out each wrap and layer with chicken, crunchy veggies, and any extras. Roll up tightly, tucking in the sides.
  4. Slice in half and serve immediately or wrap in parchment/foil for a portable lunch. Keeps fresh in fridge for up to 24 hours.

Maple Tahini Yogurt Dip with Apples

Ingredients:

  • 1 cup Greek yogurt
  • ½ cup Mighty Sesame Tahini
  • ¼ cup maple syrup
  • ½ tsp cinnamon
  • 2 tbsp orange juice
  • Pinch of salt
  • Apples, cored and sliced

Instructions:

  1. Add yogurt, tahini, maple syrup, cinnamon, orange juice, and salt to a medium bowl. Whisk until combined.
  2. Drizzle in water until a smooth, creamy consistency forms.
  3. Serve in a bowl alongside sliced apples.
