Ingredients:

  • 2 oz fresh grapefruit juice
  • 1 oz rosemary simple syrup (see below)
  • 1/2 oz lemon juice
  • Sparkling water, to top
  • Fresh rosemary sprig
  • Grapefruit wedge or twist, for garnish
  • Optional: pinch of salt

Instructions:

  1. Make the Rosemary Simple: In a small saucepan, combine 1/2 cup sugar or honey, 1/2 cup water, and 2 rosemary sprigs. Bring to a simmer until sugar dissolves. Let steep off heat for 15 minutes, then strain and chill.
  2. Smoke the Glass: Lightly singe a rosemary sprig using a lighter or torch until it smolders. Invert the serving glass over the sprig to trap the smoke. Let sit while preparing the drink.
  3. Mix the Mocktail: In a shaker or jar, combine grapefruit juice, rosemary syrup, lemon juice, and a pinch of salt (if using). Shake with ice or stir well to chill.
  4. Assemble: Flip the smoked glass upright and fill with ice. Strain in the mocktail base and top with sparkling water to taste.
  5. Garnish: Add a rosemary sprig and a grapefruit twist or wedge before serving.
