Herby Lamb Burger with Whipped Feta

Herby Lamb Burgers with Whipped Feta

Ingredients:
- For the Whipped Feta:
- 8 oz feta
- 3 tbsp olive oil
- For the Lamb Burgers:
- 1 lb ground lamb
- 1 cup fresh herbs (basil, mint, parsley, dill), finely chopped
- 1 garlic clove, minced
- ¾ tsp kosher salt
- 1 tbsp olive oil
- For Assembly:
- 1 large tomato, sliced
- 1 tbsp olive oil (for brushing)
- 4 burger buns
- Fresh arugula or other leafy greens
Instructions:
- Make the Whipped Feta: Blend feta with 3 tbsp olive oil in a food processor until completely smooth, about 2 minutes. Set aside.
- Prepare the Lamb Burgers: In a bowl, mix ground lamb, chopped herbs, garlic, salt, and 1 tbsp olive oil. Form into four patties. Grill over high heat for 2–3 minutes per side, or until internal temperature reaches 160°F. Remove and let rest.
- Grill the Tomatoes and Buns: Brush tomato slices with remaining olive oil and grill until charred and slightly softened, about 2 minutes per side. Toast burger buns on the grill.
- Assemble the Burgers: Spread whipped feta on each bun half. Place lamb burger on the bottom bun, top with grilled tomato and arugula, then the top bun. Serve warm.
