Herby Lamb Burger with Whipped Feta

Summertime grilling starts here! We’re kicking it up a notch and using American Lamb, which is a delicious, nutritious, and versatile option that can bring a delightful change to your typical burger lineup.


Herby Lamb Burgers with Whipped Feta

Ingredients:

  • For the Whipped Feta:
    • 8 oz feta
    • 3 tbsp olive oil
  • For the Lamb Burgers:
    • 1 lb ground lamb
    • 1 cup fresh herbs (basil, mint, parsley, dill), finely chopped
    • 1 garlic clove, minced
    • ¾ tsp kosher salt
    • 1 tbsp olive oil
  • For Assembly:
    • 1 large tomato, sliced
    • 1 tbsp olive oil (for brushing)
    • 4 burger buns
    • Fresh arugula or other leafy greens

Instructions:

  1. Make the Whipped Feta: Blend feta with 3 tbsp olive oil in a food processor until completely smooth, about 2 minutes. Set aside.
  2. Prepare the Lamb Burgers: In a bowl, mix ground lamb, chopped herbs, garlic, salt, and 1 tbsp olive oil. Form into four patties. Grill over high heat for 2–3 minutes per side, or until internal temperature reaches 160°F. Remove and let rest.
  3. Grill the Tomatoes and Buns: Brush tomato slices with remaining olive oil and grill until charred and slightly softened, about 2 minutes per side. Toast burger buns on the grill.
  4. Assemble the Burgers: Spread whipped feta on each bun half. Place lamb burger on the bottom bun, top with grilled tomato and arugula, then the top bun. Serve warm.
