Local Honey Bee’s Knees

Ingredients:

For the Cocktail:

  • 4 oz gin
  • 1 ½ oz fresh lemon juice
  • 1 ½ oz local honey syrup (see below)
  • Ice
  • Lemon peel or edible flowers, for garnish (optional)

For the Honey Syrup:

  • 4 tbsp (¼ cup) local honey
  • 2 tbsp warm water

Instructions:

  1. Make the honey syrup: Stir the honey and warm water together in a small jar or bowl until smooth and pourable.
  2. Shake it up: Add gin, lemon juice, and honey syrup to a cocktail shaker filled with ice. Shake vigorously for about 15 seconds, until well chilled.
  3. Strain and serve: Strain into two chilled coupe or Nick & Nora glasses. Garnish with a lemon twist or edible flower.
