Sunday Lunch Prep

Cover the counter, pull everything out, and make Sunday prep a family activity. The anchor is a roasted carrot hummus — caramelized carrots blended smooth with tahini, lemon, and smoked paprika into something vivid orange and genuinely craveable. From there, the spread does the work: fruits, vegetables, cheese, crackers, proteins, and sandwich kabobs the kids can build and skewer themselves. Pack it all up and the week's lunches are done.


Roasted Carrot Hummus

Servings: Makes 2 cups

Prep Time: 10 minutes

Cook Time: 25 minutes

Ingredients

  • For the Roasted Carrot Hummus:
    • 3 medium carrots, peeled and cut into 1-inch pieces
    • 1/2 cup chickpeas, drained and rinsed
    • 3 tablespoons tahini
    • 3 tablespoons olive oil, plus more for finishing
    • Juice of 1 lemon
    • 1 small clove garlic
    • 1 teaspoon cumin
    • ½ teaspoon smoked paprika
    • ½ teaspoon kosher salt
    • 2–3 tablespoons warm water to loosen
    • Fresh herbs for garnish
  • For the dippers:
    • Fresh crudite
    • Pita chips
    • As desired

Instructions

  1. Roast the carrots: Preheat the oven to 400 degrees. Toss carrots with a drizzle of olive oil and a pinch of salt. Roast for 20–25 minutes until tender and caramelized at the edges. Let cool slightly.
  2. Blend the Hummus: Add carrots to a food processor or blender with chickpeas, tahini, olive oil, lemon juice, garlic, cumin, paprika, and salt. Blend until very smooth, adding warm water one tablespoon at a time until the texture is silky and scoopable. Taste and adjust seasoning. Transfer to a bowl and drizzle with olive oil and sprinkle with fresh herbs as desired.

Sandwich Kabobs

  • Peanut butter and banana (sweet kabob variation)
  • Bread or rolls of your choice
  • Bamboo or other skewers

Instructions
