Ground Lamb: Internal temperature of 160°F
All Other Cuts: Internal temperature of 145°F, with a 3-minute rest
Ingredients
- For the burgers:
- 2 pounds ground American lamb
- 1½ teaspoons kosher salt
- 1 teaspoon black pepper
- 1 teaspoon garlic powder
- 1 teaspoon dried oregano
- 10 burger buns (brioche, ciabatta, or sesame buns)
- For the toppings:
- 10 slices cheddar cheese
- ½ cup crumbled feta cheese
- 12 ounces halloumi cheese, sliced and grilled or browned
- 10 slices cooked bacon
- 1 cup sliced sun-dried tomatoes (oil-packed, drained)
- 2 medium tomatoes, sliced
- 1 head lettuce (romaine or butter lettuce), leaves separated
- 1 red onion, thinly sliced
- 1 cup sliced pickles
- 1 cucumber, thinly sliced
- 1 jar roasted red peppers
- 3 ounces arugula
- 1 bunch fresh parsley
- Tzatziki
- Hot Honey
- Burger sauce (recipe below)
- For the Burger Sauce:
- ½ cup mayonnaise
- 2 tablespoons ketchup
- 1 tablespoon Dijon mustard
- 1 tablespoon pickle relish or finely chopped pickles
- 1 teaspoon lemon juice or pickle brine
- ½ teaspoon garlic powder
- Black pepper, to taste
- Serving Suggestions:
- Mediterranean: feta + cucumber + tzatziki + arugula
- Classic: cheddar + bacon + lettuce + red onion + burger sauce
- Sweet & Spicy: halloumi + hot honey + roasted red peppers + parsley
Instructions
- Prepare the burgers: In a large bowl, gently combine the ground lamb with the salt, pepper, garlic powder, and oregano until just mixed. Divide into 10 equal portions and shape into patties slightly wider than the buns. Press a shallow indent into the center of each patty to help prevent shrinking during cooking.
- Cook the burgers: Heat a grill or large skillet over medium-high heat and lightly oil the grates or surface. Cook the burgers for 3–4 minutes per side for medium doneness, or until cooked to your preferred temperature. During the last minute of cooking, top some patties with cheddar cheese and allow it to melt.
- Make the burger sauce: In a small bowl, stir together the mayonnaise, ketchup, Dijon, relish, lemon juice, garlic powder, and a few grinds of black pepper until smooth. Taste and adjust seasoning as desired. Refrigerate until ready to serve.
- Prepare the board: Arrange the burgers, buns, cheeses, vegetables, herbs, and toppings across a large serving board or platter, grouping similar ingredients together for easy serving. Transfer the sauces to small bowls or ramekins and place throughout the board with serving spoons.
- Serve: Let guests build their own burgers using their favorite toppings and sauce combinations. Serve immediately while the burgers and halloumi are still warm.
