Sweet Crêpes
Made with whole wheat flour and gently sweetened with Montana Mex seasoning, the batter rests for a few hours to yield the perfect texture. Served with a tangy Greek yogurt whip, fresh berry coulis, or caramelized turmeric ginger apples, this recipe offers a refined yet flexible take on a breakfast or dessert classic.
Sweet Crêpes
Makes: 10 crêpes
Prep time: 15 minutes, plus 2 hours resting
Cook time: 20 minutes
Ingredients:
- 1 cup whole wheat flour
- 2 eggs
- 1 cup milk
- 1 tablespoon melted butter
- 1/3 cup water
- 1 teaspoon Montana Mex Sweet Seasoning
- 1/4 teaspoon salt
- Your choice of sweet crêpe fillings (see below)
Instructions:
- Make the Batter: Blend all ingredients until smooth using a blender. Rest the batter in the refrigerator for 2 hours (up to 2 days). A mason jar works great for easy pouring.
- Prep the Pan: Heat a cast iron griddle or non-stick pan over medium-high. Lightly grease with oil or butter, spreading with a paper towel until evenly coated.
- Cook the Crêpes: Pour 1/4 to 3/4 cup batter into the center of the hot pan. Tilt the pan to evenly spread the batter. Cook until edges lift and center is tacky but set. Flip and cook briefly on the other side. Serve immediately.
**Stir the batter each time before pouring to ensure even consistency.
Greek Yogurt Whip
Yields: About 1 cup
Prep time: 10 minutes
- 1 cup heavy cream
- 3 tablespoons Greek yogurt
- 1/2 tablespoon honey
- 1/2 teaspoon bee pollen
- Zest of 1/2 lemon
- Whip cream to medium-stiff peaks.
- Gently fold in Greek yogurt, honey, bee pollen, and lemon zest.
*Always whip cream first before folding in add-ins to maintain fluffy texture.
Berry Coulis
Yields: 3/4 cup
Prep time: 5 minutes
- 1/2 cup fresh or frozen blueberries
- 1/4 cup huckleberry jam (or any fruit jam)
- Zest of 1/2 lime
- Juice of 1/2 lime
- 2–3 tablespoons water or herbal tea
- Blend or mash all ingredients to your desired consistency (smooth or chunky).
- Add more water/tea as needed to adjust thickness.
Turmeric Ginger Apples
Yields: 1 cup

Cook time: 10 minutes
- 1 apple, diced into 1/2–3/4 inch pieces
- 1 tablespoon butter
- 2 teaspoons minced fresh ginger
- 2 teaspoons minced fresh turmeric
- Juice and zest of 1/2 lemon
- 1 tablespoon Montana Mex Sweet Seasoning
- Heat butter in a sauté pan over medium-high heat. Add apples and cook 1–2 minutes.
- Add ginger and turmeric; cook 3 more minutes, stirring to brown edges.
- Add lemon and seasoning; stir and cook for 1 additional minute. Remove from heat.
