Tomato Soup & Crunchy Grilled Cheese Bites

Roasted Tomato Soup with Crunchy Herby Grilled Cheese

Ingredients:
For the Tomato Soup:
- 2 pounds ripe tomatoes (Roma, vine-ripened, or a mix), halved
- 1 large onion, quartered
- 1 large carrot, peeled and chopped
- 1 head of garlic, top trimmed off to expose cloves
- 2 tbsp olive oil
- 1 tbsp balsamic vinegar (optional)
- Salt and pepper, to taste
- Β½ tsp dried thyme or 1 tsp fresh thyme leaves
- Β½ tsp smoked paprika (optional)
- 4 cups vegetable or chicken broth
- 3 oz goat cheese, crumbled
- Fresh basil or parsley for garnish (optional)
For the Crunchy Herby Grilled Cheese:
- 24 Breton crackers (or your preferred variety)
- 2 tbsp olive oil
- Β½ tsp salt
- Pinch ground black pepper
- 2 tsp dried thyme
- 2 tsp dried oregano
- 2 tsp dried basil
- 6 oz cheese (cheddar, Gruyère, or mozzarella), shredded
Instructions:
- Roast the vegetables: Preheat oven to 400Β°F (200Β°C). Arrange tomatoes, onion, carrot, and garlic on a parchment-lined baking sheet. Drizzle with olive oil and balsamic (if using). Season with salt, pepper, thyme, and paprika. Wrap garlic in foil. Roast 25β30 minutes until blistered and soft.
- Add broth and blend: Squeeze garlic into a pot with the roasted vegetables. Add broth and blend with an immersion blender (or in batches using a regular blender).
- Simmer: Simmer soup for 10 minutes. Adjust consistency with more broth if needed. Stir in goat cheese until melted. Taste and adjust seasoning or add a touch of sugar if too acidic.
- Make the grilled cheese: Preheat oven to 375Β°F. Mix olive oil, salt, pepper, and dried herbs. Lay out 12 crackers, brush with herbed oil, sprinkle with cheese, then top with another cracker. Brush tops with oil and bake 10β12 minutes until crisp and bubbly.
- Serve: Ladle soup into bowls. Garnish with extra goat cheese or basil. Serve with warm grilled cheese crackers on the side.
