Vegan Smash Burgers with Secret Ingredient Aioli

Ingredients:
For the Smash Burgers:
- 1 large ripe plantain (yellow with some black spots)
- 1 can (15 oz) black beans, drained and rinsed
- 1 small white onion, very finely chopped
- 1 clove garlic, minced
- 1 Tbsp tomato paste
- 1 Tbsp yellow mustard
- 1 tsp ground cumin
- 1 tsp smoked paprika
- 1Β½ tsp salt and pepper, to taste
- 1β2 Tbsp olive oil, for cooking
- Burger buns of your choice
- Toppings: lettuce, tomato, pickles
For the Garlic Aioli:
- 1 very ripe banana
- 1 tsp lemon juice
- 1 tsp garlic powder
- 2 Tbsp Dijon mustard
- 1 tsp kosher salt
- β cup grapeseed oil
Instructions:
- Make the Aioli: Puree banana in a food processor until smooth. Scrape down the sides. Add lemon juice, garlic powder, mustard, and salt. While the processor is running, slowly drizzle in the oil until the aioli thickens to a spreadable consistency.
- Cook the Plantain: Peel and chop the plantain. Boil for 10β15 minutes until soft, then mash in a bowl.
- Mash the Black Beans: Add the beans to the plantain and mash until partially smooth with some texture remaining.
- Combine Ingredients: Add onion, garlic, tomato paste, mustard, cumin, paprika, salt, and pepper. Mix well to combine.
- Form Patties: Divide the mixture into 6 portions and form into patties.
- Cook the Burgers: Heat oil in a skillet over medium heat. Smash the patties flat in the pan. Cook 3β4 minutes per side until golden and crispy.
- Assemble: Toast buns, spread with aioli, and top with burger patties and desired toppings. Serve hot.
