Noodle-y Mango Salad

This salad is sunny and fun. Mangoes, edamame, sunflower seeds, and greens are tossed in a tangy sesame dressing and tangled in chewy ramen noodles. A satisfying, light meal for kids, adults, and everything in between!

Ingredients:

  • For the Baked Tofu:
    • 1 block (14 oz) extra-firm tofu, drained, pressed, and cubed
    • 2 tbsp soy sauce or tamari
    • 1 tbsp sesame oil or olive oil
    • 1 tsp garlic powder
    • Β½ tsp ground black pepper
    • 1 tbsp arrowroot powder
  • For the Ramen Noodle Salad:
    • 1 package instant ramen noodles (discard seasoning packet)
    • 1 tsp soy sauce or tamari
    • 1 tsp lime juice
    • 2 cups curly kale, tough stems removed and finely chopped
    • 2 cups spinach, chopped
    • 1 carrot, shredded
    • 1 ripe mango, peeled and diced
    • 1 cup shelled edamame, cooked
    • 2 scallions, thinly sliced
    • ΒΌ cup chopped fresh basil and mint leaves
    • ΒΌ cup toasted sesame seeds
    • ΒΌ cup sunflower seed kernels
  • For the Sesame Lime Dressing:
    • 2 tbsp sesame oil
    • 2 tbsp lime juice
    • 1 tbsp rice vinegar
    • 1 tbsp soy sauce
    • 1 tbsp honey or maple syrup
    • 1 tsp grated fresh ginger
    • 1 garlic clove, minced
    • ΒΌ tsp chili flakes (optional)

Instructions:

  1. Bake the tofu: Preheat oven to 400Β°F (200Β°C) and line a baking sheet with parchment. Press tofu 10–15 minutes. Cube, toss with oil, seasonings, and arrowroot. Bake 15 minutes, flip, then bake 15 minutes more until crispy.
  2. Prepare the ramen noodles: Cook per package instructions. Drain and rinse under cold water.
  3. Massage the kale: Place chopped kale in a bowl, drizzle with lime juice and soy sauce, and massage for 2–3 minutes until softened.
  4. Make the dressing: Whisk all dressing ingredients in a small bowl. Adjust to taste.
  5. Assemble the salad: Combine kale, noodles, mango, spinach, carrot, edamame, scallions, herbs, sesame seeds, and sunflower seeds. Add tofu and drizzle with dressing. Toss well.
  6. Serve: Serve immediately, garnished with extra sesame seeds, herbs, and lime if desired.
